Exotic game to take a bigger bite

DEMAND for exotic game and meat is expected to rise from £34 million last year to more than £50m by 2000.

The Scotsman says it is developing into a high-value sector with the increasing interest shown by supermarkets allied to the Assured British Game scheme. Cash and carry operators are also moving into the market.

There is a revival of interest in gamekeeping as a career with at least three Scottish colleges offering training.

But many sporting estates, where gamekeepers have a vital role to play in ensuring bird productivity, are under fire from a strong Pound and tougher lobbies. There has been a steady decline and many have moved into other activities.
