Gather your friends for Greek-style marinated beef kebabs

To celebrate Great British Beef Week I thought I’d share a recipe that I brought back from a trip to Greece one year. It has become a real favourite when my friends and I get together – we all cram into the kitchen, open a bottle of wine and whip up a feast of Greek dishes – with the beef kebabs as the centrepiece.

Ingredients:

(Serves 4)

For the kebabs:

  • Four British beef steaks (rump or sirloin)
  • Three large lemons
  • 100ml olive oil or rapeseed oil
  • 4 garlic cloves
  • Bunch of fresh mint
  • 2 British red peppers
  • 250g British closed cup mushrooms

For the tzatziki:

  • Tub of plain British yogurt
  • Half a British cucumber
  • 4 garlic cloves
  • Bunch of fresh mint

Start with the kebabs. Put the juice of two lemons, the oil, crushed garlic, chopped mint and salt and pepper in a bowl and mix together. Chop the beef into chunks suitable for kebabs, then mix them into the marinade until all the meat is well covered. Put some clingfilm over the bowl and stick in the fridge overnight for at least eight hours. (To be honest, I only left it for an hour and it worked fine)

Chop the mushrooms in half and peppers into chunks. Get a baking tray ready with four skewers. Put both aside.

Now make the tzatziki. Chop the cucumber as finely as you can, then add to a bowl with crushed garlic and finely chopped mint.

Mix the plain yogurt into the ingredients and set aside/put in the fridge.

Now get your skewers and tray, the chopped peppers and mushrooms and the marinated beef. Skewer the ingredients, alternating between them and place on to the tray. Spoon the remaining juices of the marinade over the kebabs. Get your rice on the boil and then whack the kebabs under the grill for 10-15min, turning often and basting with the marinade juices.

Once cooked, serve with your rice, home-made tzatziki and a wedge of lemon.

Yamas!
